Benefits of eating leftover rice
Did you know by eating leftover rice you are not just preventing food wastage but also reaping an important health benefit.
Let’s define leftover rice - a rice that has been cooked and cooled down in a refrigerator for 8-10 hrs before being eaten again with or without reheating it.
What is the advantage of this?
Studies suggest that this process of cooking and cooling the rice for 8-12 hours increases the “RESISTANT STARCH” content of the rice.
Resistant starch is a type of fiber that the body cannot digest. This undigested starch when it reaches our large intestine, becomes a valuable food for friendly bacteria there. Thus they perform the role of a PREBIOTIC.
Another advantage is that resistant starch prevents sudden glucose spikes, that is usually associated with carbohydrate rich food. Thus a useful tool in controlling blood sugar levels.
Now, I usually combine my leftover rice with CURD. This is because curd, being a good probiotic, gives a nice combination of pre & probiotic when eaten together.
